I used to play on the western server when it existed months ago. I wanna play on the JP server but is the stat menu in english or do I have to figure out what each stat is?

Playing on the Japanese server means that the game will be entirely in Japanese. If you were familiar with controls on the International server then you can get by playing with the Japanese client as many controls, such as menu hotkeys and such, are the same by default. It's just not in English.
That being said, there are many resources you can use to get by playing new content that you are not familiar with.
THIS THREAD, for example, has many useful translations for things like attribute points, common menu options, expertise, and other things that you may want to know.
The GUIDES AND FAQ section of the forums has many helpful threads to explain content not present in the International server such as Destiny, Secret Room, Mitama Fusion, Epitaphs, and much much more.
If you have problems getting your client to work properly, or you encounter anything in-game that confuses you, you can post in the TECHNICAL PROBLEMS section or HELP NEEDED section if required. Be sure to use screenshots so members can hopefully help resolve your problem.
Clan West Imp has a blog with detailed information about new demons, dungeons, and walkthroughs that you may also find helpful. You can find it by clicking HERE. The MOVING TO JP FAQ on the blog is very helpful. READ IT HERE.
Another resource often not used by people is the JP Wiki, which can be a bit tough to navigate if you don't understand Japanese, but I'll link it HERE.
Of course an English version of the wiki you are probably familiar with still exists. Link is HERE.
With the tools on these websites, and a friendly community that is usually glad to help each other out, you can have a fun time playing MegaTen on the JP server. If you have any further questions, don't hesitate to ask!
